Jimmy’s homemade elderflower cordial

Ingredients:

30 elderflower heads 
3 unwaxed lemons 
2 unwaxed oranges 
1kg caster sugar 
2 litres water 

To serve:

Strawberries
Sprigs of mint
Soda water 
Ice 

Method: 

Wash the elderflower heads and pick over to remove any bugs. 

Zest and juice the lemons and oranges.  

Place elderflower heads in a bowl with the zest of the oranges and lemons and pour 

2 litres boiling water over everything and cover. Leave overnight. 

Strain through a muslin (or clean J cloth) the next day. Add the sugar and the juice of the lemon and orange and chill in the fridge.  

To serve, stir in a couple of mushed strawberries lots of ice and top with soda and serve with a sprig of mint.
